Soft serve ice cream is different from the original scoop of ice cream in tubs and home freezers. Commercial soft serve ice cream machines have the access to overmix the ice cream. This is because they are supposed to serve ice cream on a cone from the outlet readily. There are healthier ways to make ice cream, that too by simple mashing of soft fruits into frozen sorbets. Popsicles and fruity juices frozen into ice cream slicks can be another method too. However, original ice cream is the one that has creamy ingredients.

The Procedure 

The procedure is tricky somehow, as it takes a lot of concentration. If you want that creamy, thickened texture of the ice cream, then you need to follow the method more than a recipe. The main ingredients that make ice cream are whipped cream, condensed milk, pure cream, and sugar. The texture you desire is the softened, creamy and molten one. All these ingredients are mixed for a specific time, which takes about 25 to 40 minutes maximum. You need to keep observing the ice cream as it churns and evenly forms a thick paste. Check your ice cream mixture after the 25-minute mark before you put it on churn again for 20 minutes or less. The mixing depends upon your ingredients. 

Common Mistake 

One of the biggest mistakes people make while making homemade ice cream is overmixing. It causes the ice cream to attain an icy texture, which forms little ice crystals in every bite. This keeps the ice cream from getting a thickened texture and forming a soft-serve texture instead. Over churning deflates the puffy volume of ice cream, instead, it is loose and takes up space instead of a perfect scoop. The scoop appearance of ice cream is only captive when we churn ice cream evenly for normal time. Or else, you will have the soft serve lazy texture and not a volume one. 

Solutions 

Ice cream used to be hand-mixed for this purpose as well. Many people make handmade ice cream by beating the ingredients with a fork or a whipper. This makes the ice cream perfect enough to freeze. Such ice creams stay in a scoop for a bit long and they melt into the cream. Soft serve feels like foam and that is because of the overmixing of ice cream. For every ice cream type, you need to follow the exact method, without any mistake for perfection in your delightful desert. 

Another solution to attain a perfect texture is controlling the mixing time on your machine. This will automatically stop the churning process and save the ice cream from overmixing on its own.
